Unknown Recipe (27)

Serves : 8

1kg mutton (leg of lamb)
2 onions
3 medium potatoes
1 large tomato cut and diced
5tbsp curry powder medium
5tbsp butter
1tbsp ginger – fresh
4 cloves garlic crushed
1tbsp coriander seeds – some crushed, some whole
1tsp coriander powder
1tbsp turmeric
1tbsp black peppercorns crushed
3 fresh bay leaves
3 fresh curry leaves
1tsp cumin seeds
A pinch of nutmeg
Salt
250ml of coconut milk

Method

Take the butter and put into saucepan. Add the sliced onions.
Place the pot high enough on medium hot coals. While the onions are busy browning, mix half of the curry powder and salt, and rub it into the mutton.
When the onions start to brown, add the mutton. Cook over low heat for about 30 minutes, adding about 750ml water. Mix all the rest of the ingredients, cumin seeds, nutmeg, peppercorns, coriander, turmeric, bay leaves, curry powder, garlic, ginger, and the remainder of curry powder. Add it to the meat and onions. Add tomato. Add the diced potatoes and mix with a large spoon. Let it simmer for about 1 hour on low heat. When the gravy attains proper consistency add about 250ml of coconut milk and mix well. Simmer for another few minutes and the food is ready. Serve with steamed Basmati rice.
