Butternut and Spinach Pasta Parcels

 

 

Ingredients :

 

  • Lasagna sheets
  • 244g whole peeled tomato
  • 300g onion (chopped)
  • 69g fresh garlic (chopped)
  • 10g salt and pepper
  • 500g spinach (chopped)
  • 700g butternut (chopped)
  • 100g parmesan cheese powder

Method:

 

Method for butternut stuffing:

 

  • Cook butternut in boiling water until tender. In a heated pot add onions and garlic, sauté until soft. Add cooked butternut and chopped spinach, cook together until spinach is soft. Boil pasta in salt water and oil until pasta is cooked then put pasta in cold water to stop the cooking process. When cold lay the pasta flat on the board, lay the stuffing on top of the pasta and then roll it in the pasta to form a tube. Place in a serving bowl, add tomato homemade sauce (below), top with parmesan cheese and serve.

Method for sauce:

 

  • In a pan put onions and sweat them along with garlic, add whole peeled tomato, salt and pepper. Cook until tomato is soft enough to crush into a paste. Mix well and pour over pasta parcels.
