Smoked Salmon Crumpets

This delicious dish is perfect for a light brunch or high tea and is a definite party winner. Different cold meats may be used as smoked salmon replacement.

Ingredients :


Crumpets

  • 2 large free-range eggs
  • 250ml full cream milk
  • 40ml butter, melted
  • 500ml cake flour
  • 12.5ml baking powder
  • 3 spring onion, finely sliced

Salmon Topping

  • 4 Tbsp cream cheese
  • 1 tsp lemon zest
  • Pinch black pepper
  • 1 tsp sweet chilli sauce
  • 1 packet smoked salmon

Method:

 

Crumpets

  • Whisk eggs, add milk while whisking. In a separate bowl sift the flour, baking powder and salt. Pour liquid mixture into dry mixture. In a hot pan, pour spoonful of mixture and fry both sides for 2 minutes (until golden brown).

Salmon Topping

  • In a bowl, mix cream cheese, lemon zest, black pepper and sweet chilli. Spread the mixture on crumpets and top with salmon rosette. Decorate with lemon wedge.
