This delicious dish is perfect for a light brunch or high tea and is a definite party winner. Different cold meats may be used as smoked salmon replacement.
- 2 large free-range eggs
- 250ml full cream milk
- 40ml butter, melted
- 500ml cake flour
- 12.5ml baking powder
- 3 spring onion, finely sliced
- 4 Tbsp cream cheese
- 1 tsp lemon zest
- Pinch black pepper
- 1 tsp sweet chilli sauce
- 1 packet smoked salmon
- Whisk eggs, add milk while whisking. In a separate bowl sift the flour, baking powder and salt. Pour liquid mixture into dry mixture. In a hot pan, pour spoonful of mixture and fry both sides for 2 minutes (until golden brown).
- In a bowl, mix cream cheese, lemon zest, black pepper and sweet chilli. Spread the mixture on crumpets and top with salmon rosette. Decorate with lemon wedge.
